Instructions

Rice

Step 1
Mix together 1.5 cups of rice, 1 can of coconut milk, 1 tbsp of garlic, 1 tsp of salt, and 1 cup of water. Bring to a boil. Once the pot reaches a boil, cover with lid and move to lowest heat. Let simmer for 15 minutes. Turn heat off and let it sit with the lid on for another 10 minutes.

Sauce

Step 2
Juice 2 limes into the blender container. Add 1/3 cup of peanut butter, 2 tbsp honey, 3 tsp ginger, 2 tbsp rice vinegar, 2 tsp sesame oil, 1/4 cup sweet chilli sauce, and 1 tbsp fish sauce. Blend until smooth.

Filling

Step 3
Shred cabbage and carrot. Slice spring onions. Cut lime into wedges.
Step 4
Serve with rice on the bottom. Top with cabbage, carrot, bean sprouts and onion. Garnish with sauce and limes.
