4flour tortillas
10 inch
non-stick cooking spray
1 Tbspolive oil
1onion
large, diced
2garlic cloves
minced
1 lbground beef
1jalapeno pepper
minced
1 cupcanned crushed tomatoes
drained
1 tspground cumin
2 tspchili powder
salt
to taste
pepper
to taste
¾ cupenchilada sauce
1 ¼ cupfrozen corn
1 x 15.5 ozcan black beans
drained and rinsed
¼ cupcilantro
minced
2 cupsshredded monterey jack cheese
¼ cupscallions
green part only, sliced
Instructions
Step 1
Preheat oven to 400° F
Step 2
Trim tortillas to fit in 9-inch springform pan, set aside. Spray pan with cooking spray.
Step 3
In large saucepan over medium heat, add oil. Once hot, add onion, garlic and ground beef. Cook for 8 minutes or until meat cooked through.
Step 4
Add jalapeños, tomatoes, cumin, chili powder, salt and pepper, enchilada sauce, corn and black beans. Stir to combine.
Step 5
Place 1 tortilla in bottom of pan, top with 1/3 of beef mixture, cilantro and cheese, spreading to the edges of the tortilla. Repeat 2 more times, ending with cheese.
Step 6
Place on cookie sheet and bake 15 minutes. Carefully run knife along sides of pan before removing sides. Top with scallions and serve.
