Instructions

Vegetables

Step 1
Slice the bell pepper and onion and finely chop the parsley.
Step 2
Heat the olive oil in a pan and turn the heat to medium-high. Add the bell pepper and fry for approx. 2-3 mins.
Step 3
Then add the onion and fry for another 1 min.
Step 4
Finally, add half of the fajita seasoning and the parsley and fry for another 2 minutes.

Chicken

Step 5
Cut the chicken into cubes and finely chop the parsley.
Step 6
Heat the olive oil in a pan and set to a medium-high heat. Add the chicken and fry for approx. 3 mins.
Step 7
Then add the spices and parsley and fry again for approx. 2-3 mins.

Chicken Filling

Pull the chicken apart with 2 forks or your hands.
Step 9
Place all the remaining ingredients in a bowl and mix well.

Wrap cups

Cut 3 small circles with a diameter of approx. 6 cm from a tortilla wrap. You can use a small bowl as a template. Do the same with the other wraps.

Press the wraps into the muffin tin. If they don't fit in properly, you can cut them on one side.
Step 12
Fill the wraps with the chicken filling.
Step 13
Finally, sprinkle the remaining cheese over the chicken filling.

Bake the wrap cups in a preheated oven at 180 degrees for approx. 15-20 minutes until the cheese melts and they turn a golden brown color. If they get too dark, cover them with aluminum foil.

Leave them to cool for about 10-15 minutes after baking.

Guacamole

In the meantime, mash the avocado with a fork and dice the tomato.

Place all the ingredients in a bowl and mix together.

Remove the wraps from the muffin tin and top with the guacamole.

Finally, add some parsley to decorate and enjoy!
