Instructions
Step 1
In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
Step 2
In a separate bowl, whisk together the coconut oil, eggs, and vanilla. Mix in the mashed banana and maple syrup.
Step 3
Slowly mix the dry mix into the wet mix. Once combined, gently fold in the carrots, apple, coconut, and raisins.
Step 4
Pour mixture into muffin cups and bake at 350° for 35 minutes.
