Instructions

Step 1
Sift flour, baking powder and bicarb into a large bowl. Add the sugar and mix. Make a well in the middle. Add the eggs, melted butter and milk. Stir just to combine. (Add more milk if you like a thinner batter).
Step 2
Heat a frying pan and add enough oil or butter to coat it evenly. Use a small cup or jug to drop circles of batter into the pan.
Step 3
At this stage sprinkle any flavouring into each pancake, eg blueberries/raspberries/chunks of chocolate.
Step 4
Cook on a low heat until bubbles appear on the surface and starting to brown underneath. Carefully turn using a fish slice and cook until browning on 2nd side.
Step 5
Remove to a earned plate and keep cooking until the battery is finished. You may need to wipe out the pan with kitchen roll of it is accumulating burnt bits, and heat some fresh oil.
