Step 1

1) In a small saucepan combine ½ cup ketchup, ½ cup light brown sugar, ½ cup pineapple juice, ½ cup soy sauce, ¼ cup fresh lime juice, 4 smashed garlic cloves, and 1 piece grated ginger. Bring to a boil over medium high heat and cook until thickened, about 10-15 minutes.

2) Meanwhile, pat chicken dry and season all over with kosher salt and ground black pepper. Divide chicken between 2 Suvie pans. Pour ⅓ cup sauce over chicken thighs, ⅓ cups over chicken drumsticks, reserving the remaining ⅓ sauce for Step 3. Place both pans in Suvie. Input settings and cook now. Suvie Cook Settings Bottom Zone: Slow Cook on Low for 3 hours


Step 3

3) Remove pans from Suvie and pour off liquid. Brush chicken with half of the reserved sauce and return pans to Suvie. Broil for 15 minutes, rotating pan halfway through cooking.
Step 4

4) Remove pans from Suvie, flip chicken pieces over and brush with remaining sauce. Return pans to Suvie and broil for 15 minutes more until chicken is browned and fragrant.
