Orange Loaf Cake

I've been obsessed with this orange loaf cake since I made it. It's so moist and fragrant with just the perfect amount of orange flavour. To get the best results, you need to use good quality oranges so definitely taste them beforehand. It makes a WORLD of a difference in the finished product!

Ingredients

2navel oranges
Zest
1 ¼ cupgranulated sugar
3eggs
2 tsporange extract
2 Tbsporange juice
½ cupneutral oil
any oil without much flavor or smell
¾ cupplain yogurt
1 ¾ tspbaking powder
¼ tspbaking soda
¾ tspsalt

Instructions
Step 1
Preheat oven to 350 F if using light colored pan. (If using dark pan, preheat to 325 F)

Step 2
Rub together the sugar and orange zest for a minute or two.
Step 3
Now beat together the zesty sugar and eggs together for about 2 minutes until light and airy. Add in the orange juice and orange extract. Add in the oil. Add in the yogurt and mix until combined
Step 4
In a small bowl whisk the flour, baking soda, baking power and salt.
Step 5
Add 1/2 into the wet ingredients and incorporate it together. Add in the rest and mix until just combined. Pour it into a 9x5 loaf pan and slice through the middle with a knife (this can help create the pretty crack down the middle)
Step 6
Bake at 350 for about 50-55 minutes or until a toothpick inserted comes out with a few crumbs (if you have a dark pan, bake at 325 because the pan retains more heat) it should be springy to the touch
Step 7
During this time make the lemon simple syrup by combine the two ingredients and cooking it until the sugar has dissolved and it comes to a boil. Turn off the heat immediately and let it slightly cool.
Step 8
Take the cake out of the pan and brush liberally with orange syrup

Make the icing with powdered sugar and orange juice

Let the cake cool and pour icing and spread on it.
