Instructions
Step 1
Preheat oven to 350
Step 2
Combine meat, 2/3 cheese, half the black olives, half the green onions, & sour cream in a bowl. Stir to form the enchilada filling.
Step 3
Place the stack of tortillas on a plate, cover with a wet paper towel, & microwave 1 min.
Step 4
Spray a 9x13 pan
Step 5
Load tortillas with filling (estimate based on tortilla size)
Fold & place in the pan
Step 6
Pour green enchilada sauce over top of the filled tortillas.
Cover the top with cheese. Sprinkle with remaining black olives & green onions.
Step 7
Bake at 350 for 30 minutes or until bubbling.
