Step 1
Slice all the veg thinly.
Mince the garlic, add the garlic to thawed spinach and ricotta to make a paste. Oil the bottom of a large casserole dish, add a later of potato, layer of leeks, spread some ricotta mix over that then add a layer of aubergine, add salt and pepper to each layer if desired. Keep building up the layers until the top of the dish. Pour the stock over the top then cover with foil. Put in the oven on 200° for 1 hour. Add cheese over the top then bake for another 20 mins.
