Instructions

Step 1
Take meat out of the fridge 20 minutes before cooking. Brush with olive oil, plenty of salt and pepper on both sides.
Step 2
Bring the pan to medium heat, hot enough to hear an immediate sizzle once meat is in the pan.
Step 3
Put steak in the pan and sear for 1 minute uncovered. Flip and sear for another minute on the other side.
Step 4
Decide how well done you want the steak with finger to thumb test.
Step 5
Remove steak from pan and let sit for 5-10 minutes.
