2 Tbspunsalted butter
3garlic cloves
lightly crushed
Fresh thyme

Instructions
Step 1
🔥 Step 1: Bring Steak to Room Temperature
Remove the steaks from the fridge 30 minutes before cooking. This ensures even cooking throughout.
Step 2
🧂 Step 2: Season Properly
Pat the steaks dry, then season generously with salt and pepper on both sides.
Step 3
🔥 Step 3: Heat the Pan
Place your pan over high heat until it’s very hot. Add olive oil just before placing the steak in.
Step 4
🥩 Step 4: Sear the Steak
Cook for 2–3 minutes on each side without moving it. This creates a rich, golden crust.
Step 5
🧈 Step 5: Add Butter & Aromatics
Reduce heat slightly, then add butter, garlic, and herbs. Tilt the pan and spoon the melted butter over the steak for added flavour.
Step 6
⏳ Step 6: Rest the Steak
Transfer to a board and let it rest for 5 minutes. This keeps the juices inside the meat.
Step 7
🔪 Step 7: Slice Against the Grain
Using a sharp knife, slice the steak into even strips against the grain. Use smooth, single strokes rather than sawing motions for the best texture.
