Ingredients

For the noodles
120 gramsbrown rice noodles
1zucchini
1red pepper
0.5yellow onion
1carrot
big
olive oil
2eggs
beaten
30gpeanuts chopped
fresh herbs
like cilantro, basil, mint
For the sauce
Instructions
Step 1
Place the uncooked noodles in a bowl of cold water and let them soak.
Cut all the vegetables into thin strips and fry them in olive oil for about 3 minutes while stirring. Then put them aside.
Step 2
Mix all the sauce ingredients together.
Step 3
Drain the softened noodles, heat up the pan and add an extra tablespoon of oil. Then, stir fry the noodles for about a minute using tongs to toss them around. Next, pour in the sauce and continue stir frying for another minute or two until the sauce starts to thicken and coat the noodles. To make space for the eggs, create a space in the center of the pan by pushing the noodles aside. Pour the beaten eggs into the space and let them sit for around 30 seconds. Finally, toss everything together with the tongs, so that the egg mixture sticks to the noodles and creates a sticky texture.
Step 4
Once the noodles, sauce, and egg are well mixed, add the vegetables to the pan and toss everything together. Take the pan off the heat and stir in the peanuts and herbs. Serve the dish immediately.
