Mixed Vegetable Salad with Tahini Dressing

This salad is typical in all parts of Palestine. We serve it with falafels, and as a side to fish dishes and meat. It can also be eaten on its own. It is fresh and crunchy with a kick of lemon and tahini.

Instructions
Step 1
Make sure all the vegetables are cubed to the same size, then set aside in a bowl with the parsley.
Step 2
Combine the lemon juice, tahini, yogurt and a little salt in a large bowl. Check for seasoning and add some more tahini or yogurt if you prefer. This should be a thick but droppable consistency.
Step 3
Add the mixed vegetables and stir to combine, drizzle with a little olive oil, and serve.
