Ingredients

½ cup2 % plain greek yogurt
2 Tbsplight mayonnaise
1 Tbspranch dip mix
creamy, or dip mix of your choice
1 tspmustard
398mlcan unsalted chickpeas
¼ cuproasted pumpkin seeds
black pepper
grinder, to taste
sea salt
grinder, to taste
1tomato
large
0.5english cucumber
4lettuce leaves
8slices whole-grain bread
toasted if desired
Instructions
Step 1
In a bowl, stir together yogurt, mayonnaise, dip mix, and mustard.
Step 2
Drain and rinse chickpeas. Add to bowl and lightly mash with a fork. Add pumpkin seeds and mix until well combined. Add pepper and salt, to taste. Set aside.
Step 3
Slice tomato and cucumber.
Step 4
To assemble sandwiches, place lettuce leaves on four slices of bread and spread chickpea filling on top. Add sliced vegetables. Cover with second slice of bread.
Step 5
Cut diagonally and serve.
