Step 1
Chop onions, lettuce, and mint and place in separate bowls.
Step 2
In 12 in. nonstick skillet, saute butter and scallions 1 min. Stir in flour. Stir in peas and lettuce. Add chicken stock.
Step 3
Bring to a simmer for 5 min. Season with salt and pepper. Stir in mint.
