Ingredients

1 tblspnolive oil

1onion
large, finely chopped

500 gmbeef mince

400 gmkidney beans canned

1 tspnchilli powder
Mexican

35 gmtaco seasoning mix
sachet

2 tblspntomato paste

¼ cupwater

½ cupcoriander leaves
chopped

corn chips

1 cuptasty cheese
grated

Instructions
Step 1
Preheat oven to 200c.

Step 2
Heat oil in non-stick frying pan over medium heat. Saute onion until softened, add mine & stir with wooden spoon until browned.
Step 3
Add kidney beans, chilli powder, seasoning , tomato paste & water. Reduce heat to medium/low. Simmer for 5 minutes, or until thick. Stir through coriander.
Step 4
Arrange corn chips on heatproof plate. Top with mince. Sprinkle with cheese.
Step 5
Bake for 15 minutes, or until cheese melted & bubbling.
Step 6
Top with salsa, gaucamole & sour cream. Sprinkle with chopped coriander.
