Dice onion, bacon and garlic

Brown chicken in a pan, then place aside

Soften onion in the pan to absorb chicken fat, then fry bacon with onions

Add chicken back to pan, then add garlic, bbq seasoning and mix well

Once combined add rice, stock cubes (with water), tomato puree and bbq sauce. Then put the lid on, on high heat, for 20 minutes or until liquid is absorbed

Optionally, once liquid is absorbed add a handful of grated cheese, replacing the lid until cheese is melted
