Ingredients

20 gramsyeast
100mlmilk
lukewarm
100mlwater
lukewarm
salt
1egg white
80mloil
2 Tbspsugar
500gflour
jam
powdered sugar
For smearing:
1egg yolk
1 Tbspmilk
Bake
180°C / 356°F 25 mins
Instructions
Step 1
IN A MIXING BOWL
-add 20g yeast
-100ml lukewarm milk (100°-105°)
-100ml lukewarm water (100°-105°)
-2 tbsp sugar
-whisk until dissolved
-ADD TO BOWL
-500g flour
-pinch of salt
-1 egg white
-80 ml oil
-PLACE BOWL ON STAND MIXER
-mix until a dough ball is formed
- cover bowl with plastic wrap
-let rise in a warm place for 30 minutes
-AFTER 30 MINUTES
-lightly flour work surface
-removed dough from bowl onto work surface
-roll into loaf and cut into thirds
-cut thirds into thirds
-take each third and form into a ball
-roll each ball into a 6 inch circle
-cut each circle into 8 slices (like cutting a pizza)
-stack those 8 pieces on top of one another
-USING A WOODEN SKEWER
-press the skewer down the center line of the stacked triangles
-remove the skewer
-pinch the pointed end and twist the dough end to end
-set the twisted dough on the flat end
- press the pointed end back into the dough forming a flower looking dough ball
-PLACE DOUGH ONTO A SHEET PAN
-cover with a towel for 10 minutes
-using your finger, press into the center of the dough forming a well
-fill well with jam
-brush with an egg wash (1 egg yolk + 1 tbsp milk)
-BAKE FOR 25 minutes AT 356°
-REMOVE FROM OVEN
-sprinkle with confection sugar
