Marinade
Step 1
Cut chicken breast into 3 strips lengthwise, then cut into cubes
Step 2
Mix marinade ingredients in a medium bowl

Add chicken to marinade, mix well and leave for at least 20mins
Pumpkin
Step 4
Remove skin of pumpkin
Step 5
Cut pumpkin flesh into planks of 1cm thickness
Cooking
Step 6
In a medium plate, place chicken in the middle
Step 7
Add pumpkin slices around and over the chicken
Step 8
Steam for 10mins. Alternatively, place plate into steamer rack when cooking rice. The dish can be left inside throughout the whole rice cooking process

Step 9
Ingredients can be prepped beforehand and kept for up to 1 night. Leave chicken in marinade and keep pumpkin slices separately. Refrigerate.
