Step 1
Bake or roast the chicken with salt and pepper, I prefer bone in thigh. Heat pan with olive oil and add onion to saute. When onion is soft add 4 cloves minced garlic after about 90 seconds poor in 1 cup chicken broth and add 30 ounces of fire roasted tomatoes. Add salt and pepper, bring it to a simmer for about 10 minutes, allows veggies to break down a bit further and unlock flavors. Take off heat and add in chopped basil. Blend this to a consistency you like from chunky to fine. Last poor in half cup heavy cream. Put chicken thigh in bowl and add in tomato basil soup. Top with parmesan cheese.
