Lemon Lavender Shorties

Crunchy, crumbly with the taste of lemon and lavender all in one tiny cookie. I prefer to go very light with the lavender but feel free to adjust to your personal desire. (It can be a strong overpowering flavor so just FYI)

Instructions

Step 1
1. Cream butter, salt, powder sugar and lemon zest until light in color and fluffy.
Step 2
2. Add sifted flour and lavender and mix until combined.
Step 3
3. Roll out onto a dusted parchment paper to 1/4” thickness.
Step 4
4. Place in fridge until dough is firm to the touch.
Step 5
5. Remove from fridge and portion into 1”x1” squares.
Step 6
6. Align on a sheet pan, sprinkle with sugar and bake 350F for 5-10mins or until the sides of the cookies just begin to take color.
Step 7
Allow to cool and enjoy or store in an airtight container for later.
