Mexican Casserole
Will feed a four person household. My 3 year old even said he loved it. I wish my stomach was bigger. You will have leftover ingredients to repurpose.

Step 1
Preheat oven to 375°F

Brown hamburger and add Taco seasoning to taste.

In a separate pan, cook Spanish rice.

Combine both with refried beans and mix until blended.
Step 5
Grease a small cake pan and line the bottom with salsa, then place a tortilla over top.

Spread out bean mixture evenly over the tortilla and top with salsa.
Step 7
When you place the next tortilla down, push down until you see the bean mixture reach the edges.
Step 8
Continue to layer ingredients until you reach the top of the cake pan.
Step 9
Top liberally with salsa then cheese, making sure there are no spots where the salsa shows through
Step 10
Bake on top rack of oven for 15 minutes.
Step 11
Serve with side of sour cream (optional)
