Instructions
Step 1
Wash the sushi rice until it runs clear ( double this recipe if serving more than 3 people ) now cook according to package instructions . When the rice is cooked place a paper towel on top then the lid. This helps absorb any excess moisture

Step 2
Add vinegar salt and sugar to a pot and bring to a simmer stir to dissolve the sugar then pour over the sushi rice and mix together ( use white wine vinegar if you don’t have rice vinegar )
sugar1 Tbsp
salt1 tsp
Step 3
For the surimi sushi put the seaweed smooth side facing down and cover with rice leaving a border around the edge then squeeze some Mayo and sriracha on the rice . Add two surimi sticks just off centre then a scallion and stick of carrot the same length of the sushi roll ( this saves on all the chopping ) now start at the end of the mat and roll tightly squeezing to firm up the sushi roll then roll to the end . To cut use a wet knife so it doesn’t stick and fall apart

Step 4
For the inside out sushi on the table place the seaweed and cover all over with rice . Sprinkle with sesame seeds then cover the bamboo mat in plastic wrap place it over the sushi sheet and flip the mat over . Mix Tina with sriracha and Mayo then add a layer going the length of the sushi close to the start where you will be rolling . Add a scallion the same length of the sushi roll then use the mat to firmly roll it up . To cut this use a wet knife and handle with wet hands so the rice doesn’t come off . Serve with soy sauce and enjoy
