Instructions
Step 1
Preheat oven 400 degrees

Step 2
Chop broccoli and cauli into florets (Wash & dry)
Step 3
Coat 9x13 glass baking pan with olive oil and some garlic from the jar
Step 4
Add broccoli & cauli & toss with salt and pepper
Step 5
Make room in the center and add 2 blocks of feta + coat with more OO & pepper
Step 6
Bake uncovered for 35 min
Step 7
While that’s in the oven, cook pasta in salted water ( I used brown rice fussili pasta)
Step 8
Cook for 10 min (save at least 1 cup of pasta water before straining)
Step 9
Take baked dish out after 35 min & stir and then put back in oven for 5 more min
Step 10
Drain pasta saving 1 cup of pasta water on the side.
Step 11
Add cheesy veggie mixture to pasta & stir adding in the pasta water slowly a little at a time and mixing in.
Step 12
I used 1 full cup of pasta water.
Step 13
Add fresh squeezed lemon juice to the pasta & more pepper and serve.
