Lemon & Garlic Chicken & Hasselback Traybake. My new favourite potato plus just 5 other ingredients make up this easy Traybake. I made a full on roast beef dinner last Sunday - it was blooming lovely but boy did it create a ton of washing up! This is a far simpler alternative.

Step 1
Cook the seasoned chicken skin side down in an oven proof pan with a splash of oil. Turn the chicken over, and add all the other ingredients. Give everything toss, add extra seasoning to the potatoes abs a little drizzle of olive oil and roast for 45 minutes.
Step 2
If you want to make a gravy, squeeze the lemon wedges over the pan then take them out along with the chicken and potatoes and set aside on a warm platter. But leave the onions and garlic cloves in the pan. Put the pan on the hob, add 50ml white wine and some 200ml chicken stock. Bring to the boil then reduce to a simmer for 5 minutes. You can thicken it with a tbsp cornflour mixed with water. Strain and serve!

You can use breasts or thighs but breasts will take only 25-39 minutes to cook. So colour the breasts, set aside and start by roasting the potatoes first before adding all the other ingredients for the last 25-30 minutes.
