Instructions

Step 1
First we get a tray and layer with tin foil and pre heat oven.
Step 2
Then to make our sauce we add the wholegrain mustard, redwine vinegar, and honey together.
Step 3
Then we cut up out potatos, carrots and shallots into bite size pieces.
Step 4
Add the chicken thighs to one side of the foil tray then add the potatoes, carrots and shallots to the other side add a drizzle of olive oil and cook for 25 mins
Step 5
After 25 minutes add half the mustard mixture over the chicken thighs and add salt and pepper over the potatoes and cook for another 20 mins.
Step 6
After that add the chopped up kale into the potatos and add the other half of the mustard mixture onto the potatos.
Step 7
Cook for another 5 minutes.
