Instructions
Step 1
Rinse, peel, and cut russet potatoes into 8ths. Place into a pot with enough water to cover and fully submerge potatoes. add 2 tsp salt. cook on medium heat until fork tender, about 20 minutes.
Step 2
air fry bacon at 375 for 10 minutes or pan fry.
Step 3
While that is going- grate parmesan cheese and finely chop rosemary. set aside.
Step 4
Once potatoes are finished and drained, place them into a potato ricer or mash them into a pan.
Step 5
In a small sauce pan, add butter & cream together and heat up on low/medium heat.
Step 6
Once cream and butter are heated up, add to mashed potatoes and mix well. Then add cheese, bacon, and rosemary. Mix well with wooden spoon.
Step 7
Serve with a little extra butter if desired and enjoy!
