Step 1
Make the dough in a large bowl by starting with half of the flour and the yeast. Mix the salt and sugar into the water and add it into the bowl. After a first round of mixing, add the rest of the flour and oil and knead on a counter for 5-6 minutes, until smooth. Let it rest at room temperature for 1 hour.
Step 2
Peel and boil the potatoes for 20ish minutes (until fully cooked through). In a smaller bowl, mash the cooked potatoes with the crumbled feta and mozzarella, until you can form a ball with your hands.
Step 3
Divide the dough in two pieces and roll them out individually (in a round shape). Place a ball of filling in the middle and close the dough over the top (try not to leave too much air inside, as rolling out might be hard with air bubbles). Carefully roll the dough out once again and pan fry in an oiled pan for 3-4 minutes per side. Serve with some brushed melted butter on top. Enjoy!
