Instructions
Step 1
Cook pasta according to package directions. Drain
Step 2
While pasta cooks, cook pancetta and a large skillet until crisp. Using a slotted spoon, transfer to a plate and reserve drippings
Step 3
Add oil, garlic and crushed red pepper into the skillet and stir constantly for 30 seconds. Gradually add kale and spinach, tossing until wilted
Step 4
Add cooked pasta, lemon juice and salt and toss gently to combine
Step 5
Divide equally among four plates and sprinkle with pancetta and almonds
