Step 1
Preheat oven to 400 degrees. Slice jalapeños from stem to base and split in half. Scrape out out seeds.

Cook chorizo until done. Set aside and drain all but 1tbsp worth of fat. Sauté onions until translucent. Add garlic and cook for 30-60 seconds more. Add to chorizo.

Step 3
In mixing bowl, combine chorizo, onion, Colby Jack, and whipped cream cheese. Stir until well combined. Fill each jalapeño half with mixture until gone.

Step 4
Place half of jalapeños on large baking sheet lined with parchment paper. Cook for 15 minutes and then let cool for five. Repeat with second half of jalapeños.
