Instructions
Step 1
Spread tortilla chips on a foil lined baking sheet
Step 2
Boil chicken breast until cooked through
Step 3
Remove chicken from water and allow to cool before shredding
Step 4
Rinse pot thoroughly and add oil to bottom of pan
Step 5
Chop onion and bell pepper and add to pan
Step 6
Simmer vegetables on medium heat until slightly tender
Step 7
Remove vegetables from pan and add bbq and chopped jalepeno
Step 8
Simmer bbq and jalepenos on medium heat until jalapeños are soft and flavor is incorporated in sauce
Step 9
Add sugar/stevia and other seasonings to taste
Step 10
Mix bbq with shredded chicken
Step 11
Top chips with (in order): 1) queso 2) bbq chicken 3) leftover bbq 4) pepper and onion
Step 12
Put baking tray in oven on 350° for 10 minutes
Step 13
Remove tray from oven and top with sour cream and leftover jalepeno
