Step 1
- In a pot of salted boiling water boil potatoes 15 or so minutes until soft.
- Run cold water over the potatoes and rub off as much or as little skin as you like.
- Cut the potatoes into 1/2 inch or so cubes.
- Put the potatoes in a large bowl, then stir in the onion, celery and radishes.
- In a separate bowl add the vegan mayonnaise (I used Just), mustard, pickle relish, lemon juice, salt and pepper. Mix well, then pour into potato mixture and combine. Stir in the freshly chopped parsley, saving some for garnish.
- Garnish with smoked paprika and parsley, and if you like some radish slices.
