Ingredients: 2 Cornish game hen (1 1/2 to 1 3/4 pounds) chickens (spatchcocked, you could also do 3 smaller 1 lb hens); 3 tablespoons fresh garlic (minced almost into a paste); 1 1/2 tablespoons mustard, dijon; 1 1/2 tablespoons mustard, creole (or stone ground mustard); 1 1/2 tablespoons soy sauce; 1 1/2 teaspoons hot sauce (I used tabasco; but, use your favorite brand); 3 tablespoons dry white wine; 3 tablespoons olive oil; 1 1/2 teaspoons herbes de provence; 1 teaspoon kosher salt; 1 teaspoon ground black pepper
