Stuffed Shells with Spinach Ricotta

Ricotta (which translates to “recooked”) is made by reheating the whey separated from the curd during cheese making. The whey is allowed to ferment for up to 48 hours before boiling, which leaves behind a soft, mild cheese. Ricotta is found in many dishes, including ravioli, manicotti, and of course — stuffed shells.
