In honor of Mardi Gras let’s make a King Cake inspired white chocolate cracker toffee. So yummy!

Step 1
Preheat oven to 350°F.
Line a 9×13-inch sheet pan with parchment paper. Place rows of crackers on the baking sheet, covering it completely. Set aside.
In a medium saucepan, heat the butter, cinnamon and brown sugar over medium - medium

High heat. Stir continuously while bringing to a boil. Stir continuously for 3 minutes over medium high heat. Be careful and watch it so it doesn’t burn, at 3 minutes take it off the heat and add the vanilla.
Pour the hot mixture over the saltine crackers and spread it out.
Bake for 5 minutes.
Step 3
Remove from oven and sprinkle chocolate chips over top. The chips should melt enough to spread them, if not yiu can put the sheet back in the oven for 1-2 minutes
Using a spatula, smooth chocolate chips out.
Step 4
Sprinkle green, purple and yellow sugar over top.
Cool and allow chocolate to harden. Break into pieces and enjoy.
