Ingredients
4 servings
8 ozBacon
Diced, reserve 1 tbsp or so of bacon grease
10 ozMirepoix
Onion, Celery, Carrot
1 tspBlack Pepper
divided
½ tspRed Pepper Flakes
adjust to spice preference
½ tspold bay seasoning
3 Tbsptomato paste
⅓ cupvodka
14.5 ozTomatoes
Diced
1 tspworcestershire sauce
1 tspHot Sauce
I used the Tabasco Chipotle Sauce for some smoky flavor
½ cupheavy cream
Olive Brine
optional
1 lbpasta
Olives
Chopped
Fresh Parsley
Chopped
Lemon Juice
Parmesan Cheese
any other Bloody Mary toppings you like, optional to serve
Instructions
Step 1
Cook the diced bacon in a large skillet or sauté pan over medium high heat. Remove to a paper towel lined plate once crispy. Drain the bacon grease from the pan, leaving 1 tbsp or so in the pan.
Step 2
Turn the pan to medium heat. Add the onion, celery, and carrot mixture to the remaining bacon grease. Season with 1/2 tsp black pepper, red pepper flakes, and Old Bay. Cook for about 5 minutes until softened, stirring occasionally.
Step 3
Add tomato paste. Stir to combine. Cook for 5 minutes until darkened in color. Pour in the vodka to deglaze the pan, Scrape the bottom of the pan with a wooden spoon to release any stuck bits. Cook for 2-3 minutes until most of the liquid is absorbed.
Step 4
Meanwhile, cook the pasta according to package instructions in boiling salted water.
Step 5
Pour in the diced tomatoes, Worcestershire Sauce, and hot sauce. Stir to combine and cook for 3 minutes.
Step 6
Add a splash of pasta water to the tomato mixture and immersion blend until desired smoothness. Optionally, transfer to a regular blender or food processor.
Step 7
Optionally; pour in a splash of olive brine and stir to combine. Lower the heat and pour in the heavy cream. Stir to combine. Add the cooked pasta straight to the sauce and thoroughly combine. Add pasta water as needed to thin the sauce. Add the remaining 1/2 tsp black pepper.
Step 8
Serve with bacon and desired Bloody Mary toppings. I used chopped olives, fresh parsley, lemon juice, parmesan cheese, and additional black pepper and red pepper flakes
