Chicken Bacon Ranch Casserole

My kids loved this and as a mom I love finding meals they will actually eat and not fight me on

Cooked bacon first, then cooked chicken and chopped onions in the bacon fat, drained before adding. Added ground pepper, garlic, and onion powder to the sauce, increased the amount of ranch. Added panko on top. Served with steamed broccoli. It was a hit with the whole family, even though they're all picky in different ways!

Our family of four finished about 80% of this casserole, which is unheard of. I usually expect to have at least half the casserole dish remaining. One son wanted more bacon, my husband didn't think there was enough ranch flavor, and the other son said all he could taste was ranch. I think more ranch flavor makes sense, given the name of the casserole. Next time, I think we might increase the ranch dressing (or add some dry ranch seasoning). I'm also considering adding broccoli (or some vegetable) to the dish before baking.

I would consider mixing the bacon and cheese in with the pasta, and making a crumble for the topping. It was really good on its own, but that's what we're going to do if we make it again.

I used a seasoned leftover rotisserie chicken and that was great! Added onion and lettuce and more ranch as toppings & it was so fresh!

Use bacon bits for a quicker fix.

Needs a bit of salt and extra seasoning but otherwise a great kid friendly dish

Added some lemon juice and doubled the bacon. Absolutely delicious!

If you want to enhance the cheese portion of the dish I recommend topping with shreaded parmesan or using half mozzarella and half provolone.

It was a hit with my family! Made my own Alfredo and had to cook/shred a chicken breast. Didn't realize until i was about to make it that I only had Xmas themed noodles, but no worries!
