Instant Pot Crack Chicken

Made it and it was delicious, definitely recommend as it’s one pot, easy cleanup, and kid friendly. I didn’t have bacon and it turned out just fine without it. We used it on top of corn chips and finished all in one night. Recommend doubling or tripling the recipe for leftovers or just multiple people.

Didn’t have ranch seasoning or cream cheese…I used coconut milk instead of water, seasoned chicken with garlic salt, onion powder, oregano, thyme, added honey Dijon mustard, some ranch dressing, a little bit of coconut cream. Then cooked for 15 min, added some corn starch and the cheddar cheese. Served with rice. Next time would add some veggies in with the chicken (onions, carrots, celery maybe)

I like to serve this with my own little rice pilaf I made up. Saute butter with onion, carrots, and celery and then add chicken broth and rice and cook.
