This vegan chickpea tikka masala recipe is inspired by everyone's favourite Indian restaurant classic - chicken tikka masala. My recipe is not 100% authentic (obviously - as it calls for a lot of plant-based substitutions) but I can guarantee you it's 100% delicious and satisfying. In this vegan recipe, chickpeas are cooked in rich tomato coconut sauce which is spiced to perfection with lots of ginger, garlic, turmeric, cumin, coriander, chilli and smoked paprika. This dairy-free recipe is quick and easy to make - it comes together in just about 45 minutes. You can create ultimate vegan comfort food with just a handful of simple pantry ingredients - a can of chickpeas can truly save lives sometimes. This vegan chickpea tikka masala is better than takeaway, if I may - it is a healthier, wholesome, homemade "fakeaway"! I always preferred healthier "fakeaways" over heave takeaways full of fat and flavour enhancers and god knows what! Pair this rich and creamy chickpea tikka masala with fluffy naan and some cumin basmati rice for the ultimate "fakeaway" experience :) This vegan chickpea tikka masala is also great for meal-prep as leftovers taste even better for lunch the next day! Yay!
