Provençal Goat Cheese Tuna Melt
In this recipe, I grouped flavors that remind me most of Provence (goat cheese and tuna) between some good, grilled bread, and added a soft, melt-y cheese.

1 x 6 ouncecan tuna packed in olive oil

0.25red bell pepper
1/4\" dice

2scallions
Green parts of, 1/4\" dice

2 teaspoonscapers
drained, roughly chopped

1 teaspoonfresh thyme
minced

2 tablespoonsmayo

0.5juice of lemon

red pepper flakes

4slices bread
good, I used my own ciabatta

olive oil
Slices soft cheese
use as much as you like, I used a tender, fresh Asiago Pressato
