Step 1
For the Beetroot Hummus: To a food processor, add the beetroot, lemon juice, tahini, olive oil, garlic clove, salt, cumin, and chickpea and process until you reach a smooth consistency. This can take a few minutes (about 3 to 5 minutes with my processor). Take some breaks if needed, to not overheat your food processor.
Step 2
If you want a thinner, smoother texture, add the ice cubes to the food processor, if using, this is a great tip to get an extra smooth consistency.
Step 3
For the Toast: Toast the sourdough until it reaches your desired level of crunchiness. Spread a generous layer of the beetroot hummus on the toasted sourdough. Top with diced avocado, sprinkle with black sesame seeds, and season with chilli flakes and salt. Enjoy 💚
