Step 1
Begin by blending the cashews, soy milk, nutritional yeast, and chipotle in adobo together. This will form a creamy, smoky cashew cream that serves as one of the key components of the wrap.

In a separate bowl, combine the diced coriander, lime juice, chopped tomato, and diced red onion. Mix well to create a fresh and vibrant salsa.
Step 3
Take each wholemeal wrap and make a small incision at the bottom center, extending it halfway up. This will make the folding process easier.
Step 4
Now, it's time to assemble your wrap. Place the diced avocado on the bottom left corner of the wrap. Spoon your freshly made salsa on the top left corner. Spread the mashed black beans on the top right corner, and dollop the smoky cashew cream on the bottom right corner. Finish by adding a layer of baby spinach.
Step 5
Fold the wrap according to the technique shown in the video. Once folded, grill the wrap for 2 minutes on each side to give it a nice, crispy texture.
