2 cupsquinoa

1yellow capsicum

2corn on the cob
1 tspolive oil
1 tspsmoked paprika
1jalapeno
deseeded, diced
250gtomatoes

0.5red onion
1 cupcoriander
chopped
1avocado
diced
2 Tbspolive oil
¼ cuplimes
juiced
1 tsporegano
1 Tbspmonk fruit
or another sugar/sweetener

Instructions
Step 1
Preheat a pan on medium to high heat. Brush the corn with olive oil and smoked hot paprika. Cook on the pan, turning every 2 minutes, for up to 10 minutes, until kernels start to brown but are still juicy.
Step 2
While the corn is cooking, prepare the dressing by combining the olive oil, lime juice, oregano, monk fruit, and salt in a small bowl. Mix well and set aside.
Step 3
In a large salad bowl, assemble the salad in the following order: dressing, black beans, edamame, quinoa, diced capsicum, diced tomatoes, red onions, grilled corn, diced jalapenos, and fresh chopped coriander.
Step 4
When ready to eat, add diced avocado and tortilla chips if using. Toss the salad gently to mix all the ingredients and ensure they are well-coated with the dressing.
