On Sunday, we had "Sheet pan balsamic chicken". We just happened to have Italian rubbed pork loin leftover in place of the chicken. It absolutely worked beautifully! (I chopped up the pork into a big bowl & threw prepped veg with the marinade) Seperated the already cooked pork onto another sheet pan, just so it would overcrowd the veggies. (I only have an apartment sized oven/ baking sheets)
Couldn't believe how delicious this turned out & we're excited how low carb this is, too. We're a family of 3 & we're fighting over the leftovers!
