Tomato bruschetta

Really nice, and very simple. I omitted garlic completely and didn't have any basil in. I put the bread slices to warm in the oven for about ten mins on 180 fan, instead of the toaster. I used m and s arrtila(?) tomatoes. So nice. Oh and a little salt and pepper in the mix.

I used spring onions in place of red onion and enjoyed the bruschetta on buttered garlic bread with feta.

Easy and perfect

Really easy to scale. Can make a batch if the mix at the start of the week and have breakfast sorted for the whole week. Easy snack. Healthy. It's my go to.

Did half tomato and garlic, half salmon. Delicious.

We make it on sourdough bread (actually, whole wheat sourdough works surprisingly really well!) with fresh mozzarella. We toast the bread and cheese in the airfryer, then add the tomatoes on top after, super tasty! I like it with a little extra balsamic and basil.

Didn't use balsamic vinegar and added fresh oregano

It tastes good but it is not really bruschetta. Bruschetta is even easier! no need for onion, garlic or balsamic vinegar. Consider instead using origano. When you mix tomato, basil, origano, salt, pepper and oil you can leave it for 30 minutes or more to make flavours even stronger! Then add everything to the bread just out of the oven! Yummy!

Unfortunately, the bread went bad before I could eat it but I had crackers and used them instead. Delicious!
