Pan con Tomate is one of my favorite fresh summer snacks. It's a great way to use up some ripe and juicy tomatoes!

Instructions

Step 1
1. Preheat oven to 350˚F. Place ciabatta pieces onto a baking sheet, cut-side up, about 1/2 inch apart.
Step 2
2. Brush 3 tablespoons of oil over the sliced ciabatta pieces and toast for 12 to 15 minutes.
Step 3
3. Allow ciabatta to cool slightly, then while still warm, rub the cut side of garlic clove onto the tops of each slice of bread.
Step 4
4. Grate the cut side of each tomato into a large bowl, discarding skins.
Step 5
5. Spread an even layer or grated tomato onto each piece of toasted ciabatta.
Step 6
6. Sprinkle with salt and pepper and drizzle with remaining oil. Serve.
