Tomato, Boursin, and Shrimp Baked Orzo

This recipe is a delicious spin on the "viral baked feta pasta". I swapped the feta for Boursin, added shrimp and spinach, and the orzo pasta cooks in the same baking dish!

Ingredients
4 servings
1 packageboursin cheese
i used the garlic & fine herbs flavor
1 ½ cupsOrzo
uncooked
1shallot
small, diced
4cloves garlic
minced
12 ozCherry Tomatoes
or grape tomatoes
¼ tspRed Pepper Flakes
optional, adjust to taste
2 tspolive oil
3 cupsChicken Broth
I used no salt added broth
5 ozbaby spinach
1 lbShrimp
I used raw peeled and deveined shrimp
½ tspKosher Salt
additional as needed
¼ tspBlack Pepper
additional as needed
Instructions
Step 1
Preheat oven to 400 degrees. Add the block of Boursin to the center of a 9x13 baking dish. Pour the uncooked orzo around the cheese. Add the shallots, garlic, and cherry tomatoes evenly on top of the orzo.
Step 2
Season as desired with red pepper flakes, salt, and black pepper. Drizzle with olive oil. Pour in the chicken broth and cover with foil. Bake for 30 minutes.
Step 3
After 30 minutes, remove from the oven and check if most of the liquid is absorbed. If there is still a lot of liquid, bake for another 10 minutes.
Step 4
Once most of the liquid is absorbed, remove from the oven. Add the baby spinach and mix until wilted and well combined. The tomatoes should burst and form a sauce with the melted Boursin as you stir.
Step 5
Season the shrimp with salt and pepper then place them on top of the baked orzo in an even layer. Bake uncovered for 10 minutes or until the shrimp are cooked through. (see note)
Step 6
Divide among bowls to serve. Optionally drizzle with additional olive oil as desired.
