drained and stirred to break up large pieces, we use half light tuna and half albacore

¼ cupcelery rib
finely diced

2 tablespoonsonion
finely diced, use yellow, white, or red depending on your taste

1 ¼ cupmayonnaise

2 tablespoonsmustard
we used yellow mustard, but dijon works well

1 tablespoonsweet pickle relish

1 tablespoonlemon juice

½ teaspoonsalt
plus 1 tablespoon for the macaroni cooking water, extra at the end if needed

¼ teaspoonblack pepper

1 teaspoonsparsley
chopped, for garnish, optional
