Ingredients

1 ½ cupswhite shortgrain rice
cooked, measurement before cooking
1 teaspoon salt ((6g))
6gsalt
2 tablespoon granulated white sugar ((25g))
25ggranulated white sugar
¼ cup unseasoned rice wine vinegar ((50g) no added sugar or sweetener)
¼ cuprice wine vinegar
unseasoned, no added sugar or sweetener

Instructions

Step 1
In a small bowl, combine salt, sugar, and rice wine vinegar. Whisk together until the salt and sugar is fully dissolved. You can heat the vinegar a bit to help in this process.
Step 2
Scoop the rice into a large bowl by skimming rice off the top. The idea is to not smash any rice but to simply lift it off the top.
Step 3
Pour the contents of the vinegar mixture over the entire bowl of rice. With a rice paddle, fold the rice until the flavoring has spread evenly. Use small taste tests to determine.
Step 4
Use to build hand rolls, nigiri sushi, or anything else! I actually used it in my brother’s Spam musubi recipe
