1 lbsChicken Thighs

I used boneless skin on, Boneless works great too

1 TbspBaking Soda

Optional if you want to velvet the meat, Marinate with baking soda for 10 minutes before rinsing well

1 Tbspcooking oil

2 inchGinger

2Dried Red Chilis

2 Tbsplight soy sauce

1 ½ Tbspdark soy sauce

1 ½ tspRock Sugar

1 ½ Tbspsesame oil

1 TbspCooking Wine

Add 2 tbsp if you want a stronger taste of rice wine

1 cupbasil leaves

1 stalkGreen Onions

I way overcooked it (paranoid much?) But I velveted the chicken so it was still soft and tender. I will definitely make this again since it was delicious and apparently even I can't ruin it.

This was pretty good but was surprisingly close to another recipe I make that just involves chicken, oyster sauce and basil. So I may stick with the lazier way of cooking 😅
